So the question for this week is, “How much cheese is enough?” Probably owing to the plethora of cooking channels and recipe websites, we continue to mess with a good thing. Aside from bacon, my personal choice, macaroni and cheese may be the best comfort food invented and yet we continue to tinker with it as if we could possibly make it better. I’m speaking of the recent assaults by something called 4-cheese mac & cheese. Somewhere someone actually thought, “Hey, let’s throw in more cheese.” It was most likely the same guy who first put squid on a pizza…or broccoli. Really? 4 cheeses? They have managed to take what was a simple, artery-clogging comfort food and make it so I can literally seize up and pitch forward into my plate. C’mon, it’s macaroni and cheese, not macaroni and how many cheeses can I pour, scoop, spoon, ladle or stir into it. Nobody goes into a restaurant and orders macaroni and cheeses. Just because a cow in Wisconsin or a goat in France decides to eat from the other side of the mountain doesn’t mean I need another flavor of cheese tossed in my macaroni. It’s already mostly cheese. We don’t need more of the same thing it already is. Here’s an example for you. When I’m sitting down enjoying a nice piece of salmon, I don’t think to myself, “You know what would make this salmon ever better? Tuna.”
